Auditing of the supply chain to EN45011 standards, covering activities in the beef & lamb supply chain including abattoirs, cutting plants, wholesalers, butchers and foodservice outlets. Assurance schemes accepted are those listed under the Assured Food Standards Red Tractor scheme.
Scope of audits cover 6 categories of membership:
1. Abattoirs, Processors (cutting and packing plants and ready meal manufacturers).
2. Catering Butchers.
3. Independent Retailers (stockists).
4. Multiple Retailer outlets (stockists).
5. Food Service Outlets (Pubs and Restaurants).
6. Approved distributors (non-assured premises distributing boxed vacuum packed beef and lamb from assured processors).
Each of the above categories has a different level of audit requirements and also the frequency or the sample size needed to be audited.
